The perfect dressing for our Vegan Carousel Salad.

Lemon Artichoke Vinaigrette

INGREDIENTS

½ cup white vinegar

4 lemons, zested and juiced

5 cloves roasted garlic

4 Tbsp canned/marinated artichokes

1 Tbsp Dijon mustard

2 Tbsp agave

¼  cup buttermilk

3 cups blended oil

2 cups grated parmesan

 

WHAT YOU DO

Blend all the ingredients except the oil and cheese. 

Slowly add oil until emulsified. 

Add cheese until incorporated.

Adjust the seasoning.
